How do I turn off or stop the ability to create tickets from people just emailing.

Greetings from Freshworks Community.
If the Email is configured as a support mailbox then ticket will be created whenever the mailbox receives the email. To Stop the ticket creation, below are the options
- Delete the Support Email that is configured for processing Emails to tickets by using the Delete button
- Create an automation rule to directly delete the Ticket on creation from the Source as Email as shown below
