I have several Categories and Sub-categories used in Incidents and Changes.

  1. Is it possible to hide categories if they are no longer required?
  2. If not, what happens to the information in existing (albeit resolved and closed) incidents and changes if I delete the Category or Sub-category?

You can use Business Rules to remove the categories/ sub-categories that are no longer required.
