It would be great if you could auto-watch items if they were taken off you, i.e. they had been assigned to you but someone else takes ownership of that item.

Not quite sure of the exact scenario here but let me take a shot at this. Assuming the ticket will stay assigned to the original agent, he/she would be notified via email and in-app notification whenever there's an agent or customer response on the ticket.
If the ownership of the ticket gets transferred to another agent, the agent has to be a watcher on the ticket to receive further updates. Automatically adding the agent as a watcher on all tickets that they don't own will cause mayhem and flood their inboxes with notifications.
