We have TONS of workflows. Much like the service request catalog, is there a way to categorize workflows? Namely, workflows for different departments.

I think this is a good idea, if you go to business teams then you will be able to split almost by department as your teams generally are departments.
but yes i agree having to categorize them would be helpful
