It would be nice if looking at the main ticket area if it showed a little text that said "Last response from: (responder/agent)" so that at a glance we could see who last responded to a ticket.

This feature has been implemented already - You'd now see the preview of any latest response/note made on the ticket right from the ticket list view. Here's a snapshot of how the replies show up on the screen :
