Is there a placeholder that contains the mailbox/portal email address? I'm trying to do a dynamic signature for new tickets and we use multiple products. I'm seeing portal names and ticket URLs but have not seen the mailbox/email address assigned to each product as a placeholder.

Portal Email Placeholder?

You could use the placeholder {{ticket.from_email}} to auto-populate the FROM address using which the email would be sent out of Freshdesk. Since the default Product-email address mapping happens at the time of ticket creation, this placeholder would return the email address specific to the product.
