Is there a workaround to just open a specific category when going to Service Catalog
instead of getting all items displayed mixed up?

Hi Tony,
This is very much possible though portal customization where we can either embed a new tab in the Enduser page which redirects to the specific Service item or hide all the other items in the Service item home page.
This customization are achieved through J.script or CSS, I will have one of the support Rep's to reach you on this.
