I’d like to understand the recent trend of % of tickets closed by the requester. I know I can use this action in automation rules, but I have been unable to find the metric in the reporting engine.

I ran into the same limitation before. As far as I know, that metric isn’t available in the reporting/analytics section yet. Submitting it as an idea in the Freshworks community is probably the best way to get it considered for future updates.
