I understand you are looking to customize ticket fields in your helpdesk to suit your fields in your ERP, we do have a few options you can choose from.
Freshdesk has different kinds of ticket fields that let you capture various types and levels of information. For example, you could use a single-line text field to collect one-line details and you could add drop-down fields to give your customers a list of options to choose from.
According to your use case this should be an appropriate option to apply here-
Phone number : A number field can be chosen here to store relevant information such as order ID, phone number etc.
Address1 : Multiline text field to include multiple lines of text
Address2 : Multiline text field to include multiple lines of text
State : Dependent Field to create a category and sub category
City : Dependent Field to create a category and sub category

Zip : Single Line Text Field to store your ZIP information
Additionally we can also make the fields mandatory choosing the “Required when submitting the form” option under behavior for customers.

We service customers from many locations. We need to copy the shipping information from their ticket into our ERP to ship them parts. Is there any way to have ticket fields with formatting.
