Having this same exact issue. Works fine for onboarding tickets where the Employee Name is a free text field, but for offboarding it’s a mandatory drop down and {{cf_employee_name}} doesn’t work correctly.
I guess a workaround is to create a custom field for plain text and call it employee name but then you have to go into the business rules and hide the mandatory out of the box employee name that uses the drop down which doesn’t seem like an ideal solution.

My issue has been resolved. Was on with support and they found what was causing the issue. When we first implemented Freshservice here, we had a 3rd party company set things up for a week or two until they were.. released from their duties.
Someone had renamed the Employee Email field to Employee Name which mucked things up.
All is well not and I was able to rename that field and add a free txt field for Employee Name that allowed me to use the place holder to have names show up in titles of tickets correctly like they do for onboarding tickets.
