Would it be possible to hide tickets from agents, so we'd be able to store data against a ticket, without it cluttering up the agents UI. This data can then be accessed like any normal ticket field using the API / third party app.

You can try the Custom ticket fields app to hide/disable fields for agents. Please give it a try and let us know if you have any feedback!
