May I ask where is this filter you are trying to use?
In the main ticket list, Source allows multiple choices, and Employee Onboarding is available as one:

in automator we dont see Onboarding but just Offboarding xD
We ran into the issue as well. Employee Onboarding has to be enabled. Go to Admin → Global → Field Manager → Ticket Fields → Source…. make sure that “Employee Onboarding” is enabled there. This ended up resolving our issue.
