I would like to see only tickets having to do with Source=Onboarding. So does the filter not allow that for some reason?

May I ask where is this filter you are trying to use?
In the main ticket list, Source allows multiple choices, and Employee Onboarding is available as one:

I would check the ticket fields field manager to see if it’s enabled
in automator we dont see Onboarding but just Offboarding xD
We ran into the issue as well. Employee Onboarding has to be enabled. Go to Admin → Global → Field Manager → Ticket Fields → Source…. make sure that “Employee Onboarding” is enabled there. This ended up resolving our issue.
