Is there a way to add to the conditions and actions on the workflow. For instance i want the action to be if the category is X - show the following choice list in another field? is there a way to add to the conditions and action criteria?

To enhance the functionality of conditions and actions you should look at incorporating Custom Objects and the Orchestration Center.
But from your use case I would look at “Business rules for forms” here:
