So I want to implement a process where by a user creates a request by filling in a request form created using service catalog. Once that form is submitted then a change gets created automatically using the relevant fields from that service catalog request. I can’t seem to find the right workflow automation options for this process so I’m asking if it’s possible and if so how ?

You need to use API https://api.freshservice.com/v2/#create_change to create the change.
